Q: Typical working day
A: I drift between cooking and photography. A normal day involves running around, gathering ingredients and going on location.
Q: Most indispensable kitchen tool?
A: My palate.

A: In a desert island situation, Cooking by Hand by Paul Bertolli or Beaneaters and Bread Soup by Lori di Mori. They both chronicle dying traditions in Italy.

A: Jamon de Bellota. It seduces me every time.

A: Handmade pasta with fresh truffles. It’s irresistible.

A: Tylenol and yum cha.

A: Anna Wintour. Is she really that bad?
Q: What tip would you give to young chefs getting started?
A: Read, read, read! It’s important to be open-minded and allow yourself to keep learning. I’d also say eating and travelling.
Q: Where do you hope to be in 5 years time?
A: Right where I am now, but with a place to call my own.
